Roaster’s Notes:
Our first Peru coffee in the selection, and it’s a natural process! As we were renewing our selection, we were on the lookout for new coffee origins. Among the various samples we tasted at the Nordic Approach table, this Natural Peru stood out by far compared to other Peruvian coffees. We believe it will delight both classic natural coffee enthusiasts and those who appreciate its flavor profile, perfectly aligning with our taste preference. We are thrilled to have Peru Cedros in our selection!
Cedros Cooperative is a relatively new player, having started working with Nordic Approach just about a year ago. Since its establishment, the cooperative has been producing a wide range of high-quality coffee, from blended varieties to micro-lot productions. The majority of Cedros members are small-scale farmers with 1-3 hectares of land. They predominantly grow Caturra, Catuai, Pache, and Bourbon varieties, and all members of the cooperative adhere to organic farming practices.
Coffee Processing:
The coffee cherries come from small deliveries of 1-3-hectare farms at elevations ranging from 1550 to 2020 meters above sea level. Almost every member has their own processing station on their farm. This unique system allows the farmers to process their own coffee using consistent recipes before bringing it to the cooperative, instead of relying on a single washing station, which is typical for cooperatives. The cherries undergo a pre-fermentation period, typically lasting between 15 to 48 hours, and the drying process takes about 12 to 25 days, depending on weather conditions.
Nordic Approach closely monitors the cooperative’s production to ensure the right blend of batches, varied flavor profiles, and overall high quality of the coffee.
Our first-ever Peru coffee in the selection presents delightful tasting notes of raspberry, black tea, subtle peach aroma, and flavors of raspberry, wine-like tones, and overripe citrus.
