Honduras Caballero Bomba De Fruta #2
Roaster’s Notes
KaKafein Culture lovers, those who regularly buy quality coffee from us and brew it, I think, know our friendship with the Caballero family. 😊 Caballero Bomba de Fruta is the sixth lot and third harvest we bought as Caballero coffee. Bomba de Fruta Lot 2 is the price-performance successor with a similar taste profile compared to its brother Lot 5 from last year!
Marysabel and Moises are very sensitive to environmental sustainability in the production process. In their annual work, they devote a significant portion of their focus to improving the soil so that coffee trees can grow in good conditions. They have their own organic compost for this. If you would like to hear from the first person about their sensitivities during the production phase, you can access our interview with Marysabel Caballero from the link. https://www.youtube.com/watch?v=NCzZ87jBCgc&t=807s
Those who read the story of Caballero Bomba De Fruta Lot 5 will remember it. Marysabel and Moises have several farms in total in the same area. And they sell the harvests they collect from these farms separately under the name of farm, and the harvests they collect from all their farms under the name Caballero. The name Bomba de Fruta is the name they give to their lots where they apply extended natural processing.
Processing of Coffee:
After the pickers collect the ripe cherries, the cherries are dried on raised beds covered with shade and begin to ferment. The total fermentation time takes between 20 and 40 days, depending on the weather conditions during the harvest period. Afterwards, the coffees are separated from the fermented shell layer, cleaned and filled into sacks.
