Our first Peruvian coffee in the selection, and it's a natural! While renewing our selection, we were on the lookout for new coffee origins. Among the various samples we tried at the Nordic Approach booth, this Natural Peru stood out significantly from other Peruvian coffees. We believe it will satisfy the classic natural coffee enthusiasts and perfectly aligns with our taste preferences. I am delighted to welcome Peru Cedros to our selection!

Cedros Cooperative is a small cooperative that Nordic Approach started working with about a year ago. Since its establishment, Cedros Cooperative has been producing various qualities of high-quality coffee, ranging from blended varieties to micro-lot productions. The majority of Cedros members are farmers with 1-3 hectares of land. Their productions are mainly focused on Caturra, Catuai, Pache, and Bourbon varieties. It is worth mentioning that all members of Cedros Cooperative produce their coffee organically.

Processing of Coffee:

The coffees in our selection are the result of small deliveries from 1-3 hectare farms located at altitudes ranging from 1550 to 2020 meters. Almost every member of the cooperative has a processing station on their farm. As a result, instead of collecting the cherries at a single washing station in the usual cooperative system, farmers process their own coffee using the same recipes and bring it to the cooperative. The pre-fermentation period for the coffees typically lasts between 15 to 48 hours. Drying time varies between 12 to 25 days depending on the weather conditions.

Nordic Approach regularly monitors the cooperative’s production to ensure that the batches are well-blended, have diverse flavor profiles, and maintain a high overall quality.

Our first Peruvian coffee in the selection, Peru Cedros, presents aromas of raspberry, black tea, and subtle peach, while in taste, it exhibits raspberry, wine-like, and slightly unripe citrus notes.
